The multi-course menu changes constantly, but expect dishes such as grilled aubergine caviar with Ibérico ham, honey and melon or grilled beef belly, abalone mushroom and herb jus, while Carolina gold rice pudding with brown butter and emulsified egg yolk has become a signature. Trois Mec – the three friends are culinary masters: Ludo Lefebvre, Jon Shook and Vinny Dotolo. Ludo Lefebvre is a French chef which trained with the great masters in France for 12 years before moving to Los Angeles. Lefebvre has described his food as "French with an international flavor." Jon Shook and Vinny Dotolo have been champions of unpretentious and ambitious small-plate dining.
